Vegan Onion Quiche

Probably the French and the German are still arguing who is the "owner" of this amazing dish, the Quiche. This recipe, not like the common quiche, which consists mostly of eggs and cream, is a yummy vegan recipe.
The onion is found almost everywhere in the kitchen. In pastries, salads, sautés, salty dishes and even in sweets. The onion is rich with vitamin C, fiber, iron, calcium and many more. (Health benefits of the Onion)

The ingredient I used here in order to connect the filling is Arrowroot powder mixed with a bit water. Chickpea flour is also a possibility, or even a couple of boiled potatoes.   

The Ingredients :


For the Base –

Two cups of whole grain flour
A bit sea salt
Two spoons of cold vegan butter
Some chickpea flour
Cold water

For the filling –

A lot of yummy onions (I used almost a kilo and added a bit leek for the nice taste)
Olive oil
Sea salt
Pepper
A bit grated nutmeg
Arrowroot powder
Soy cheese (Or any other vegan cheese you like)

Unfamiliar but interesting Spice
We start with the making the base. You sift the flour into a bowl and add a bit chickpea flour and the salt and mix. Add the cold butter and squeeze a bit, just for fun. Add a bit cold water and start kneading. Continue adding water and kneading until the dough is nice and doughy. It doesn't take too long, just a few minutes. Each time I add a different spice to the dough. This time I found something unfamiliar but interesting, so I added it as well. You can add also nuts and even dry fruits, it adds a lot to the taste afterwards.  After the dough is ready wrap it with plastic wrap and place it in the fridge for about an hour. 



The making of the filling is very easy. You sauté the onions with some olive oil until they are nice and soft, let them cool down a bit and add the salt, pepper and nutmeg.

After about an hour take the dough out and place it in baking tray covered with baking paper. You can use a rolling pin or better and more fun, use your hands. It's important that the bottom is not too thin and the sides are not too thick. Pierce the base with a fork a bit and put in the oven for about ten minutes in medium heat. 



In the meantime mix the arrowroot powder with some water and mix with the onions. When the base is ready fill it with the filling and grate some cheese on it. Bake it for about 40 minutes in 180 degrees. Let the quiche to cool down a bit before taking it out of the baking tray. Enjoy!
